    Hi Kiki,
    I make my own saurkraut and Kimchi. Its so easy and yummy. I make them both in quart jars and leave them on the countertop for about 9 days. Until recently, i made ginger ale . But I read some advice you gave about Kombucha and decided that the ginger ale had some of the same qualitys. Do you agree? Maybe not the best for you, sugar and yeast?

      SOunds great – they are really such a health boon. 9 days sounds long! I have always made them in warmer climates, you are very patient! Yes, as for kombucha, I agree – not the best. Avoid yeast and sugar as much as possible. Though ginger ale does sound tasty…. best in health and stay in touch! Kiki
